Yeast fermentation temperature

Hi

I've been doing 'enhanced' extract kits for a while with good results and I'm looking at moving up to BIAB.
My fermentation temperature brewing pale ales has been between 18 and 24 Celsius as I don't have any temp control but as i say, it's not been a problem and I've had good results.
When I look on this forum at the BIAB recipes almost all of them that I've seen, regardless of the beer style states the fermentation temp as 18 or 19.
So my question is, if I brew those same recipes at 18 to 24 will there be a problem or I should be ok?
What do others do to maintain a constant temp of 18? I live in Melbourne so the temperature can fluctuate wildly within a week.

I can tell you this, after close to 30 years of brewing, my biggest improvement in my beers came with temp controlled fermenting.
Warm fermenting tends to create some fruitiness. Esters. Cooler fermenting will give a cleaner flavour profile that puts the beer forward instead of the byproducts of fermentation.
Some like the esters, I don't.

Do a Google search on fermentation chambers. I personally use a small deep freezer with a temp controller.
A cheaper solution is to use a large container to bathe the fermenter in ice water. You have to keep an eye on the temperature and ice but it is better than nothing.
Some people are like slinkies. Not good for much, but bring a smile to your face when pushed down the stairs.

Sorry for the probably daft question but when you say a fridge 'with a temp control'.
What do you mean exactly?
So if I was to buy a small second hand fridge to put my fermenter in do I then need to buy something else as well for the temp control bit?

Yes the temp controller is a separate device. I have used the stc1000 in the past. It has a temperature probe that goes into the fridge. The fridge and a heat source (if needed ) are controlled by the unit to cycle on and off according to your set temperature range.
The stc1000 requires some building to work but is cheap. There are pre assembled temperature controllers on the market that can vary in cost.

Thanks for the link, yes get it now.
As you dig into this brewing hobby you get more and more sucked in!

One final question then, if I have a fermenter and a fridge and a temp controller with a probe and say a heat belt, how do you get the probe and heat belt power line from outside the fridge inside the fridge?, need to drill holes in the fridge or something?

You could drill. My original fridge was an old style with the door locking handle and I just ran the wires in thru the opening. My current freezer I do the same; just run the wires under the lid. There is some efficiency loss doing that but unless you are trying to lager I don't think it effects much

I don't use a heat source in the fridge, but that's my own personal preference.
The probe cable is quite thin and fits across the door seal.
