The only batch I burned really bad was a wheat, a protein rest may help...I'm not sure. I got gun shy after ruining that batch and now I drag out the propane rig whenever I am brewing anything with over 50% wheat grist.

I used to have a lot of scorching, not just with wheat but I discovered I had very poor conversion and the unconverted starches were the problem. Sorted my water profile and now its not a problem even with 50% wheat

Hmm, I do the iodine test for conversion but I've also read that it can be unreliable. I wouldn't have a clue what to look for in the water report. My mash PH is usually in the appropriate 5ish range. Were you also getting poor attenuation due to the poor conversion? I don't think I'm having attenuation issues.

That sounds like a possibility. My efficiency has been a bit all over the map. Sometimes a bit higher than BIABacus predicts, and sometimes a good bit lower. Are there some key things to look for in the water report?
