I found plenty of cool looking temperature controllers on eBay*, but none of them seem to come with sockets to connect the oven to (I'm planning to put the pot in the oven while mashing). Are there any instructions for connecting the AC sockets?
* The controllers that caught my eye have eBay item numbers 190803901394, 251339796949 and 370887730110. None of them feature AC sockets.

The PID's (controllers) you reference operate a bit differently than you may think. While they are powered by AC current, the output does not directly connect to another AC device (oven). The controller's output i designed to switch either an SSR (solid state relay) or a contactor, both of which require their own AC power which is then relayed to the heating device (oven, heating element, etc). You will also need a temp probe or thermocouple to connect as an input to the PID in order for it to function. Perhaps you might want to investigate/research further on the subject, maybe review the wiring diagram and operating manual for PID, etc.

You may want something more along the lines of this: http://www.ebay.com/itm/Johnson-Control ... 2eca00ab4c (not sure if you need a 110V or 220V version for your needs though).
I have to ask: Are you just planning to use the oven to hold mash temp or are you planning on using the oven to perform the whole mash process (eg: bringing the mash water up to temp, performing the mash, raising to mashout)? If you are going to use the stove top to get the mash up to temp and simply use the oven to maintain mash temp for the duration you don't need a temp controller. Just set the oven on it's lowest setting and check the mash temp occassionally. There is enough thermal mass to maintain mash temp with only a slight warming (if that) needed from the oven. In all honesty, skipping the oven entirely and just wrapping your pot with a blanket will provide comparable results.

Using a PID to automatically control the temperature of the mash is appealing, but perhaps it is an overkill if I can get stable enough temperatures via alternative, low tech, methods. In any case I was planning to use the oven only to hold mash temp, not to bring the water up to temp, so I guess I might as well invest in better insulation than a controller. A blanket should work, but a DYI custom fitting coat (in the spirit of the Bodum Nero thermal neoprene tea press coat) would be most convenient, no?

Choices are limited only by your imagination: an old winter parka, sleeping bag, military surplus wool blanket, foam sleeping pad borrowed from your camping gear, that ugly Christmas sweater with the snowman on it that your Aunt Mabel gave you, etc.
