Scott,

Your first experience was a bummer, no question. It was also quite a learning experience, thought, and your next brew will be better.

One option for keeping your bag off the bottom of your pot is a folding stainless steel steamer insert like this one:

You might be able to find one that folds out to the appropriate size for your pot. Just remove the central column so the bag can rest flat on the steamer.

Sorry to hear of your problems with your first brew Scotty.

When mashing (I use an electric urn) I get water to strike temperature, set the bag up, add the grains giving them a good mix with a paint stirrer, measure the water temperature. Then I put the lid on, cover the whole pot with an old sleeping bag and a doona and just leave for 90 minutes. I don't worry about trying to maintain the exact temperature. Using this method the temperature usually drops 1-2 degrees C over the 90 minutes.

+1 to Ian. I use brewzor pro on my android to get the correct strike temp. Measure the temp of your grain and then put it into the calculator and it tells you what strike temp is needed to hit your mash temp once the grain has been added.

I have done a summer lightning which is in the FV now. I recultured yeast from 2 bottles of summer lightning. The reculturing yeast is a hobby in itself!
