Xmas Brews and a Happy Christmas

Right Guys, Christmas is just around the corner and since we are a global community :thumbs: I expect there will be a range of styles being brewed or have been brewed for the celebrations.

So what will you be drinking whilst opening your presents ? (post recipe or link if you want).

Me ? I'm going to brew a Choclate & Vanilla stout next weekend no winter warmers for me as I'm not really into big beers :sneak:

recipe to follow..(on the new Biabacus ??)

I wont be home for Christmas, so it will probably be a commercial beer or a good red wine.

Looking at what I already have in kegs, I will be drinking either a Golden Ale with all Cluster hops, or an Irish Red Ale for the new year.

Chocolate & Vanilla stout sounds nice, I look forward to seeing that recipe :)

I'm brewing a couple of beers to give away as gifts. One is definitely Christmas inspired; a ginger bread stout. It'll be an oatmeal stout base with cinnamon, nutmeg, and cloves. Should be interesting. I'm open to suggestions if anyone has them.

Being high summer, Christmas will involve lagers, law mower beers and summer ales :)

I'm planning on having at least a Nelson Sauvin summer ale and a BoPils (if I can get a wriggle on)

I spent the weekend building a fan partition for my ferm fridge so I can have two brews on the go at different temperatures. Worked out the only way to get supply up will be to do a brew each week (2 weeks in fermenter)

Here's the base recipe for my Vanilla Chocolate Stout on the calculator.

I brewed this back in February and it turned out great, it had a nice hint of Liquorice when young which mellowed with age and it turned into a great pint. The original base recipe I converted is covered in this thread Here. I'm going to add a couple of Vanilla pods into the barrel to add the "vanilla" hit. I'm toying with adding Coco nibs at the end of the boil for a bigger chocy flavour.

Thinking about creating an "Aztec Chocolate Porter" (porter with hot peppers, cocoa, and cinnamon).....

This has been kegged for about 2 weeks with 2 vanilla pods which were soaked in irish whiskey. As I was moving the keg I had a cheeky sample. :blush:

The vanilla is coming through nice and strong at the moment although I expect it to fade away abit with age. There is no taste of Licquorice that was there the last time i brewed this recipe, I think the vanilla is taking over at the moment. Overall a nice pint and should go down well at crimbo..

Somehow I got my seasons turned around and have been doing a lot of "Summer" beers as of late, maybe it's all you guys from south (waayyyy south) of the equator rubbing off on me?

I've got a Kolsch and a Hefe on tap but am looking forward to cracking open the first bottle of my Saison Dupont clone on Christmas Eve.

Yea rubbing off is right. I've read so many Aussie posts that my toilet spins the opposite direction when I flush. (OK I know that's just a myth, but my toilet doesn't know)

Just dropped WY1272 into an NRB Amarillo Ale, in a few minutes I'm going to drop WY3068 into another Hefe...

I reckon they should be ready sometime between Xmas and NY :)

Now that I've freed up two cubes... gotta work out what to do next ;)

Speaking of Holidays (and upside down brewing seasons)....I am in my basement this morning brewing up a batch of Clementine Hefeweizen, Christmas music playing on the radio and snow just starting to fall outside my window.

Merry Christmas (or whatever holiday you choose to celebrate at this time of year) to my brewing friends all over the world!!!!!
