American Wheat with Cascade, Saaz and Galaxy.

Hi all,
I hav'nt been around for a while but still brewing. After my Bo pils "pale ale" I thought I would try some more Saaz in a hoppy beer. I had heard of other people using Saaz and Cascade together. I have never made a wheat beer so I thought that would be a good combination. I added a bit of Galaxy to satisfy my hop craving. I think goulaigan had told me once not to over do the galaxy on first try so I over did the Cascade and Saaz instead ;) I fermented @ 19c (66.2f) for 5 days upped it to 21c (69.8f) over 2 days. Dry hopped @ 21 for 4 days and crashed to 2c (35.6f) for 3 days. 2c is all my little ferm fridge can handle in this hot weather we are having atm. I like crash chilling as it makes force carbing very easy.
Im very happy with the result. I should have done a 21-23lt batch as I lots a bit of beer to trub and dry hops soaking it up. Next time I might try it without the Ale malt and maybe use euro malts. Id like to try a APA with mostly Pils malt too.

Special Instructions/Notes on this Beer

20 min hop additions added @ 0 min. 0 min hop additions added @ 85c. Kettle cooled over night and yeast pitched the following day. Dry hop additions may not follow recipe depending on what hops are left over. PS I did not cool over night. I ended up no chilling. 50g cascade & 30g Galaxy. Tastes great! I should have upped the batch size for dry hopping with alot of hops as the hops soak up alot of beer.

In the notes after the no chill bit it should read "dry hopped 50g Cascade & 30g Galaxy"
