A recipe given to me by an old hand at brewing.

Oatmeal Stout(5 gallons)
10 pounds 2-row pale
.5 pounds Chocolate Malt
.5 pounds Roast barley
2 pounds oatmeal
Mash at 152 for 60 minutes
Sparge with enough 185F water to collect 6.5 gallons, boil down to 5,5 gallons
1.5 oz EKG for 60 mins
.75 oz Fuggles at 20 min
Use White Labs WLP004
OG 1.060, FG 1.015 or less

Of course I BIAB-ified it.

I've done 8 variants of this Munich Helles/ Dortmunder recipe over the last few months, its a shame the latest (a Dortmunder with Beachbum's hops! :thumbs: ) wasn't the batch I entered in the Nats, that's the one I'm getting stuck into over the new year, it is just delish... :love: sublime... :drink:

Happy new year to you guys. Looks as though you are making a stylish job of it :thumbs:.

My last beer of 2010 was a mystery bottle that has been sitting in my fridge for quite a while. It was from another brewer (have no idea who - no label) but was a really zesty APA. I only found it by accident as it was stored near a few bottles of chilled, boiled water I keep on hand.

My first brew the year is a Chinese Strong International Lager
For those who came in late, last year a consortium of us :ugeek: imported about half a tonne of Chinese Hops for around $A 10 a kilo :o and the quality was disappointing to say the least. I reckon our front man got shafted by the suppliers in China who offloaded some substandard stock. They do grow nice hops over there, in the Western provinces, and you only have to try some of their hoppier beers such as TsingTao to appreciate that. Their hop industry was set up in the 60s by Czechoslovakian advisors when they were all commo bruthas :salute: together so it's all on a sound footing.

Anyway the guy has done another but smaller buy this time, and I've taken a kilo of Chinese Saaz and we are assured that this time it's good stock. The Saaz I got smells the real deal at the moment, let's see how it ends up in the glass: :yum:

4.00 kg Pale Malt, Pilsener (Barrett Burston) (1.5 SRM) Grain 70.18 %
1.00 kg Rice, Dry Weight (1.0 SRM) Grain 17.54 %
0.50 kg Cara-Pils/Dextrine (2.0 SRM) Grain 8.77 %
0.20 kg White Wheat Malt (2.4 SRM) Grain 3.51 %
60.00 gm Saaz Chinese [3.00 %] (60 min) Hops 18.1 IBU
60.00 gm Saaz Chinese [3.00 %] (10 min) Hops 6.6 IBU
1.00 tsp Yeast Nutrient (Primary 3.0 days) Misc
1 Pkgs SafLager Swiss Lager (DCL Yeast #S-189) Yeast-Lager

I'm doing a cereal pre-mash with the rice, then 64 degrees for an hour, Plzen style water treatment, ferment fairly high with the S-189 and should be drinking it late January. If it's any good I'm sending my hop buddy Ralph 120g and see how he gets on as well.

That looks the goods to me, Beachbum! :yum: A few of those would be good today even, the jungle out there that was once our yard needs mowing badly! Might be a bit strong, although some anaesthetic may be necessary by the end... ;)

Hope this consignment of Chinese hops is better than the last affair, that was rather disappointing for all the effort and fartarsing around that went into it with organising and distribution, caveat emptor aside of course.
