Hi, I would suggest that you listen to the pod-cast on the Brewing Network on Meads, the beverage that you would like to make is discussed.
Take particular notice of the description on structured nutrient additions, it works absolute treat.
When fermentation is finished leave it on its lees and cold condition for 4 weeks at 2C to clear it and bottle in the normal way ie bulk prime with honey or bottle it still.Cheers

I just bought my wife a bottle of rabbits foot sweet mead.its from the meadery the sunday session goes to.She loved it
