2. pour the 125ml of yeast into a sanitised jug
3. add 500ml of cooled boiled water to the yeast and stir
4. add sugar?? How Much?

Just follow Todds advice! Never use sugar in a starter. If yeast eat sugar they won't eat anything else! Use wort or DME. I am sure you meant DME!
