Yankee Doodle Dandy American Pale Ale

Post #1 made 13 years ago
Hi Guys

I'm gonna brew tomorrow (first for a month or so) and I want to use what I have in store rather than go out and buy more "stuff". I really need to use up some stock :idiot:

Anyway I fancy brewing an APA for a change. I usually stick to British Ales but as I have some Cascade and Citra I thought I'd go all Yankee Doodle Dandy (Copyright alert !!! that's a great name for a beer  I hereby claim that name as my own, unless someone else has beaten me to it.)

I've come up with this using a recipe in a book I have and what I have in store. What do you guys think ?

I normally do a 90min Mash and Boil, the recipe calls for a 60 min mash and Boil. I may stick with 60 and save an hour. Edit: Did a 90 mash 60 boil

Mish Mash Cascadian APA with added Citra (Yankee Doodle Dandy)

OVERVIEW

Style: American Pale Ale
Name: To be confirmed once my Lawyers in the USA have conducted a full copyright search and reported back.
Yeast: WLP001 (2L starter) or Safale US 05
Fermentation Temperature: 19c
Original Gravity: 1.052
Total IBU's: 40
Colour (EBC): 12
Efficiency at End of Boil: 80%
Mash Length (mins): 90

Source/Credits: BCS
Notes/Instructions/Comments:
The bittering hops used (Northern Brewer)are what I had in stock. These can be changed to your liking, along with the Aroma hops if you feel so inclined. The OG can also be increased as desired, I dropped it to 1.052 from 1.056. The efficiency was dropped from 83% to 80% to reflect the gravity, this may need adjusting to suit your equipment/records.

Yeasty,
Looks like a dandy! I would dry hop with a little Citra or Cascade? The name should be "Yank my doodle it's a dandy"?
tap 1 Raspberry wine
tap 2 Bourbon Barrel Porter
tap 3 Czech Pilsner
tap 4 Triple IPA 11% ABV

Pipeline: Mulled Cider 10% ABV

Yea thinking about dry hopping. I might have a taste and if I think it needs it I will move it to a secondary and dry hop. I'm not a Hopaholic like you.

Gonna reuse the yeast any suggestions ?

Yeasty,

When I reuse my yeast I just (Bottle-Keg) and then dump a room temperature cube on the used yeast cake. I am not yet into washing yeast and preserving it so when I reuse a yeast cake I am thinking ahead on what to brew next. In other words I don't brew a beer with 5 pounds of smoke malt and expect to use the resulting yeast cake for a Amber lite. I would brew the other way around though!

For reuse of the yeast cake you have here I would think you would be pretty much open to anything? As long as you brewed a Cascadian APA try a Cascadian IPA? I believe I have attached a recipe That I used to win a competition this year. I know that hop bombs are not your style (yet) so this is a mild compromise that might be fun? If you don't like it right away it mellows into a great sipper with a chunk of blue cheese!

In case I didn't attach the recipe correctly here is the link to the original http://www.northernbrewer.com/documenta ... ackIPA.pdf

I have not had a drink today? I know it's late in the day for me.(9:47am) but sometimes you have to make sacrifices. I am brewing a double batch tomorrow and am trying to make my notes while sober. I am doing a 10 gallon or 39 liter? boil and this is new to me. Actually I am doing the Black IPA that I just posted to you. I will add Briess (extra special) 2 lbs and Biscuit malt also 2 lbs. Oh, and one pound of Peated malt. These are the changes that I made when I won 1st place last March. The amounts are doubled because I am making a double batch.

I am going to No Chill 5 gallons and Immersion chill the other 5 gallons. I will have to split the batch when mashing because 30 pounds of grain is a bit to much! I will be doing a taste test between No chill and Immersion chilled.

Fathers Day and I'm chilling with a glass or 2 of Yankee Doodle Dandy. Turned out great, didn't bother to dry hop in the end as I thought I would try it without first and perhaps dryhop next time.

Thanks Yeasty,

I'm about to walk out the door for work and all I can think of is how good having one of those right now would be.

Looks damn good :) (we really need a Homer Simpson drooling type emoticon.... mmmmm beer!)

I've just drank the last bottle of this and I have only a glass or 2 left in the corney. I must say its been a great beer right to the end considering I had my first drink of it mid June. Still hoppy although not as strong as the early pints, more rounded I'd say. The bottle is slightly better than the corney but I suppose that is to be expected. Deffo a do it again brew, might use more hops next time..

:salute:
