Thank you for posting this thread, as I'm soon to be in exactly the same position.
Despite having what I view as a cheap, rough-and-ready, AG brewing solution (Burco 30L, Bag, pre-milled AG kit from MaltMiller), I bought BeerSmith2 to try to help me get everything right.
I find the program confusing, currently - especially in the setting up "equipment" section.
The first recipe I'm going to use will have 5.4kg of grain and 680g of candi/candy (?) sugar. OG is meant to come in at 1065:

I'd really appreciate someone's answers to these questions:
-> should I aim to use all 27 litres (suggested maximum)?
-> How much water should I "leave out", please, so that I don't overflow? (5.4kg Grain Bill)
If I "fill" to 27L with water, then add grain, I'm surely going to have an overflow.
