3rd eBIAB - Overshot my gravity - Good or Bad?

Hi all,

I kegged my 3rd biab brew, a summer saison. It looks like I overshot my FG. What would cause that and is it a good or a bad thing? It tastes pretty good, but, I'm going to condition it in the keg for a few weeks.

Hi FatDog,

I certainly don't have all the answers so hopefully some others will chime in as well.

Some things that I noticed:
1) You put in an expected attenuation of 70%. Where did you get that?
2) According to DanStar's info flyer, they note a "high" attenuation rate and do not list what it is. If 70% is low and 75% is average, without a better number I might have estimated "around 80%" or so..."if" attenuation rate is "high".

4) Your actual / "apparant" attenuation came in at like 72%... (?) On the lower side.
5) Your Final Gravity wound up really low...and you had estimated a really high FG.

I'm wondering if it is a yeast issue...but that's just a guess. Hopefully someone with a better sense of this yeast and beer style can help out. I've never brewed a Belgian style beer... :smoke:

Good news is it still made beer, and you like the taste - so it certainly won't go to waste. Document what happened, numbers (which you did) - learn what you can from it, but likewise don't worry too much about it...

Belgian and Saison are dry styles, and you achieved just that ... be happy! If you only attenuated to 1.025/1.021 ... I think that would actually be a problem.
