AG # 3 - Wowbagger Bitter

Well I'm very pleased with the brew today.

The Recipe

4500g Bairds Maris Otter pale malt
150g Crystal malt
100g Torrified Wheat
30g Chocolate malt

25g Challenger - first wort
25g Fuggles - first wort
25g Fuggles - last 10 minutes

Yeast - Safale S-04

I've been using brewtarget software as my little netbook is tricky to use spreadsheets with so I find it easier than the calculator.

I did an overnight mash again. Bairds has a reputation for giving poor efficiency so many people are giving it a longer mash and overnight mashing fits my schedules better. I was going to do 60 minute boil but changed my mind and went for 90 minutes as there seemed to be a bit more wort collected than I had anticipated. In the end I should have done a 75 minute boil as I has to top up with nearly 2 litres into the fermenter.

As before efficiency was very high, about 85% assuming that brewtarget is correct. The mash started out at 66.4C and when I unpacked it 9.5 hours later it was 60.6C.

The OG is 1.054 which should give a 5.3% ABV and IBU is calculated at 33.3.

Having tasted it I have high hopes that this beer is going to be lovely it was certainly the 1st one where things went, pretty much, to plan.

Nice one Jeltz..with that S-04 you'll be drinking it on Sunday :lol:

On the bairds malt thing, did you buy a 25kg sack? are you getting to the bottom ?

I'm asking cos my last brew with bairds was great on the eff' front but I was near the bottom of the sack and I noticed I had more flour.

This has been in a barrel for nearly 2 weeks now, a couple of days ago I drew a half pint off and tried it. Its nearly cleared already and the flavour is amazing! It tastes very similar to one of my favourite commercial beer and I can hardly believe that its something I have made myself, I intend leaving it now for Christmas consumption by which time it should be at its peak.

I usually have a hard time getting up enthusiasm for Christmas (bad memories) but at the moment I can't wait!

Great beer that you made yourself for Christmas - priceless :peace:.

The efficiency of around 85% in the kettle at that gravity means all is great in the mashing department.

Well there is a very slight haze on this beer but i don't care. It is without doubt the best beer I have ever tasted.

It is very close to my favourite commercial beer but I would say mine is nicer!

The only trouble is that it is far too easy to drink!

Well its nearly all gone :( I shall be brewing this again and will probably up the bittering hops a little and do some dry hopping too but still its a successful recipe. Feel free to copy :)
