Boil question

I have recently joined the group and slowly been studing all the info, I have gathered the equipment I need but have only been able to obtain a 11 liter pot, will do a 10 liter MaxiBIAB as my first attempt on a Pale Ale.

I have completed a test boil and noticed that if I leave the lid off my pot I don't get a good rolling boil. If I leave the lid on then the boil is a good rolling boil, otherwise I just have rising bubbles.

I have tried my stove as well as a gas burner with the same effect :think:

With the lid on I don't lose as much to evaporation so I am not sure of the top up volumes...

Any advise for a lost noob would be greatly appreciate :scratch:

If you're struggling to boil an 11L pot on your domestic stove and gas burner then there's something not quite right- tell us what you're using though, we may be able to nut it out.
If all else fails, I'd get a cheap gas camping stove (example attached) as I know they can just boil the 19L stockpot full to the brim, 11L should be easily boiled. They are often had for just $20 with four gas canister refills from larger chain stores (eg. big double ewe here in Aus), likewise they should also have a stainless 19L stockpot for about the same price.
Definitely want the lid off, although you can partially cover it with the lid if you can rest it such that any condensation drips outside the kettle. Another method is to float something on the surface, I've seen foil- covered foam blocks used, I've used a stainless kidney dish and it helps if the heat source is only just adequate. Insulation would help, for sure, however care needs to be taken in selecting a non- combustible material or at least applying it so that burning isn't an issue.

Thank you all for the responses,

I have ordered a new gas burner like the one below

Stock pots of that size are not commonly available in South Africa, I can order one from a catering company but the cost is not worth it,

Commonly available are stew pots, which are shorter and have a larger diameter (not sure if these will work)

The 11 liter pot is very thin walled and it seems to lose heat quickly.
