hi goulaigan, it's been 2 days at 1.015, but really glad for your comment, as i can't get to the bottling until sunday and was thinking that leaving it a bit longer in the fermenter might have had some detrimental effect ... very happy to let it sit, thanks for the feedback.

No problem, I'm still fairly new at this and will be doing my 9th (i think?) biab hopefully this weekend if the wife allows it hah. Most of my batches usually come down lower than 1.015 although this of course depends on numerous things like yeast strain, mash temp/wort fermentability, temperature etc., and I'm not familiar with the beer you are attempting to clone, so that could very well be normal for that batch.

I generally leave my brews to ferment a good 2 weeks or so, have left one up to 4 weeks and usually no less than 10 days even with the really fast fermenting ones like hefs etc., although again it can totally depend on the things listed above. I've read many theories on time left in fermentor and negative/positive effects and there seems to be a lot out there on that topic but I am pretty sure you are safe for at least 2 weeks. (experts correct me if i'm wrong here)

. This error is great in a way as you'll find the beer will still be perfectly acceptable/yum so it can teach you that you don't need to be super-stressed when you do make a bit of an error. Looking forward to hearing how this tastes.
