American IPA recipe critique - Lucky Brew #13

I have never had much luck with American Pale Ales or IPAs so hoping for some feedback on this recipe before I brew it on the weekend.

The hops I have used in the recipe I have approx 240g of each so can tweak the quantities and timings fairly easily.

Disclaimer: I have never used any of these hops before!

I would like an IPA which is reasonably balanced.

Some constructive advice is appreciated!

BungBrew's Lucky 13 IPA - Batch 13

Recipe Overview

ABV: 6.1% (assumes any priming sugar used is diluted.)

Original Gravity (OG): 1.064
IBU's (Tinseth): 60
Bitterness to Gravity Ratio: 0.945
Colour: 20.1 EBC = 10.2 SRM

Kettle Efficiency (as in EIB and EAW): 80.2 %
Efficiency into Fermentor (EIF): 72.3 %
Note: This is a Pure BIAB (Full Volume Mash)

Times and Temperatures
Mash: 90 mins at 65 C = 149 F
Boil: 90 min
Ferment: 8 days at 17 C = 62.6 F

Volumes & Gravities
Total Water Needed (TWN): 37.57 L = 9.92 G
Volume into Boil (VIB): 34.62 L = 9.15 G @ 1.049
Volume of Ambient Wort (VAW): 25.53 L = 6.74 G @ 1.064
Volume into Fermentor (VIF): 23 L = 6.08 G @ 1.064
Volume into Packaging (VIP): 21.3 L = 5.63 G @ 1.016 assuming apparent attenuation of 75 %

The Grain Bill (Also includes extracts, sugars and adjuncts)
96.8% Voyager malt (7 EBC = 3.6 SRM) 6602 grams = 14.55 pounds
3.2% Dark Crystal (240 EBC = 121.8 SRM) 220 grams = 0.49 pounds

The Hop Bill
29 IBU Summit Pellets (16.8%AA) 18.1 grams = 0.64 ounces at 60 mins
26.4 IBU Calypso Pellets (15.3%AA) 18.1 grams = 0.64 ounces at 60 mins
6.2 IBU Centennial Pellets (10%AA) 18.1 grams = 0.64 ounces at 10 mins
3.4 IBU Centennial Pellets (10%AA) 18.1 grams = 0.64 ounces at 5 mins
0 IBU Amarillo Pellets (9.2%AA) 18.1 grams = 0.64 ounces at 0 mins

Mash Steps
Mash Type: Pure BIAB (Full-Volume Mash) for 90 mins at 65 C = 149 F
Mashout for for 10 mins at 78 C = 172.4 F

Miscellaneous Ingredients
1 Whirfloc (Boil) 5 Mins - Clarity

Chilling & Hop Management Methods
Hopsock Used: Y (Pulled 0 mins after boil end.)
Whirlpool: 0 mins after boil end.

Bung, when you say you haven't had much luck, what do you mean?

Also, is the recipe above based on another recipe? In other words have you started with a solid recipe?

I guess I have brewed an APA and American IPA before any they were malt heavy and not what I was expecting.

The recipe is based on another brewer's IPA which was a good brew but some of the hops he used namely Simcoe and Cascade I am not able to source easily.

I tweaked it slightly based on the ingredients I have in stock.

This is just my 2c, but I don't think you'd be happy with that IPA recipe either. 3-5oz of hops simply isn't enough for a shining example of American IPA.

The malt bill will be fine, but you need to alter the hops a bit. Perhaps if you show us the source recipe, we can get an idea what the original brewer was trying to achieve? I'd like to see it, before I start making edits.

What you have entered on the left side of Section D. will get you 98.5 IBU's. The hop totals at the end of the boil look okay, but when the BIABacus scales down to 60 IBU's you go from a "moderate for style" 3oz of late boil hops down to 1.8oz. This is no good, especially since there are no dry hops listed.

Example: Not knowing anything of the original recipe, for this to work well as an AIPA ... I'd immediately change the Summit and calypso to 90m additions of 15g each.

The rest (Centennial, Centennial, Amarillo), you can keep the times the same but up them to 30g to achieve your 60 IBU. This would be the quickest fix.

Also, I would dry hop this with at least 4oz.

This is just an example to point you in a direction, no need to take it as gospel.

Thanks Rick.

Would I dry hop with all the varieties or just Centennial & Amarillo?

I have just over 8oz of each hop but want to ensure I have a good hop balance.

My last IPA attempt was Citra and Galaxy but I now know I don't enjoy Galaxy as much as other hop varieties.

Looking at the original recipe they used 4oz in a 5 gal batch ( converted)

Centennial and Amarillo play well together, so that's the safe route. It really depends on your personal taste, and future brew plans with whatever remaining ingredients there are. This decision is up to you, I'm afraid. I'd dry hop with at least 3-4oz total, though.

Well I ended up buying 100g of Cascade as well.

So ended up going with:

24 IBU Summit Pellets (16.8%AA) 16.2 grams = 0.572 ounces at 60 mins
21.8 IBU Calypso Pellets (15.3%AA) 16.2 grams = 0.572 ounces at 60 mins
10.4 IBU Centennial Pellets (10%AA) 32.4 grams = 1.144 ounces at 10 mins
3.8 IBU Cascade Pellets (6.7%AA) 32.4 grams = 1.144 ounces at 5 mins
0 IBU Amarillo Pellets (9.2%AA) 32.4 grams = 1.144 ounces at 0 mins


And I'll add these in a few days:

0 IBU Cascade Pellets (6.7%AA) 32.4 grams = 1.144 at 0 mins (Dry Hopped)
0 IBU Amarillo Pellets (9.2%AA) 32.4 grams = 1.144 ounces at 0 mins (Dry Hopped)
0 IBU Centennial Pellets (10%AA) 32.4 grams = 1.144 ounces at 0 mins (Dry Hopped)

Definitely the most hops I have ever used in a brew so hopefully it turns out ok :drink:

It smelt great during the boil and has a nice thick krausen on it.

Given I still have heaps of hops should I increase the dry hopping or maybe save it for my next APA or IPA?
