Good Day, I do all rests, Beta gluten the most, Protein rest is also important for WHEAT, RYE, and OATMEAL.
Pilsner is mostly to fully modified. So, if it is a 6row barley you may want to rest. If it's 2 row, you pobably don't need a protein rest.

Single infusion should work fine.

I was asking because I think that doing rests with biab is a "little" complicated (having to apply heat and stir for quite a long time, I suppose). So if I can use a single infusion temp without (big) problems, I'll go for it!

Most modern malts are fully modified, so no protein rest required. You can just go with single infusion, with confidence.

If, however, you start using oats, flaked corn etc. you may get improvement from a cereal rest or protein rest.

For standard all malt brewing, single infusion is sufficient.
