is this infected?
dealing with sours and wild fermentation has made me a bit unsure when encountering what i think to be an actual infection.

this is a set of pics of a 3 way side by side saison. i had ECY08, WLP568 and Fermentis T58. the question is regarding the T58. the pics were taken after two weeks of fermentation starting at 18C, raised to 26C and than crashed.

it looks like a pelicle has formed on the beer (the other two looked clear when i peaked in.

i bottled the T58 beer. today i looked at the bottles. they all have a ring of gunk at the top of the beer level. no gushing.

i usually don't like T58, so it's hard to say if it tastes off or what.

what do you think?

It's hard to say from just the pictures. You might have a bad infection or a good one? Remember what they say "A weed is just a flower in the wrong place" With all the sours you brew I would expect a lot of funky yeast's in your brewing area? Try it! Let us know if we should buy some new sour yeast strain from you?
