Advice for replacement hops for Summit

Hi Guys,

Finally bought myself a crown urn and I am gathering my supplies for a Black IPA however the recipe calls for 28g of summit at the 60min (the rest of the hops are chinook, centennial and cascade) my local store does not stock summit and I know craftbrewer does have them in stock but don't want to drive 60min in this rain for one packet of hops!

My choices are Stella, columbus or Magnum - What would be a good replacement

Hi Natdene,

You probably need practical experience from someone, but for now from BeerSmith:

Summit: High alpha variety bred by American Dwarf Hop Assoc. Can be grown commercially on a low trellis.
Aroma: Strong citrus, grapefruit notes.
Substitutes: Warrior, Millenium, Columbus, Tomahawk, Zeus

I usually order hops online. Better selection and I think fresher.

Columbus is a direct substitute but I would use the Magnum. Magnum is a clean bittering hop and in this case the 60 minute addition is a bittering only addition which doesn't add any flavor.

I keep a stock of Magnum on hand specifically because it's a high bitter, flavor neutral hop. I use it for bittering in almost every recipe that I don't FWH.....Magnum is cheap and I don't have to waste yummy hops like Styrians or Citra on a simple bittering charge.

Thanks Bob, it's actually your Black IPA recipe is was going to try but the LHBS only stocks the basic hops I was stuck with the above. Next time a bit more planning and a trip to a different store and I will be set.

It may taste a bit different than mine but it will taste good! It may have to mellow a bit before consuming in quantity! :smoke:

I brewed it again today! With different hops and I didn't put any hops in until 40 minutes into the boil. Then every 5 minutes until flame out. I also put in shredded licorice root into the no chill container? Wish me luck on this one! :luck:

The brew is done. Added bittering hops (Columbus) "after" boiling for 40 minutes?? Added Chinook, Centennial, Zythos at 5 minute intervals and Centennial again at flame out. that's 5 ounces of hops in a 60 minute boil! I will dry hop with ?? in a couple of weeks. Thanks Point Brew Supply for all the ingredients!

It will be faint. I wanted this sipper to be a bit richer. The faint hint (hopefully) of the licorice root should make this beer one to remember? Hopefully remembered for a unusual beer that tasted good rather than (another one of Bob's disasters)? I doubt that I will detect the licorice root at all? I tried a bit as a chew and it bore little resemblance to a licorice stick! This is just my Black IPA with a few changes. Instead of "Peat smoked malt" I used "Oak smoked wheat"? I also delayed my bittering hops to a "Early" late hopping? Maybe I changed to many things at one time??

Licorice root is very pleasant, not nearly as strong as licorice rocks or the chewy stuff.

I wish they sold large electric urns in the US. Brew day would go much faster.
I should have thought of that.
