End of Boil Gravity (EOBG) and Original Gravity(OG)

What is the difference between the two measurements?

If I pull a sample at the end of the boil and cool it, measure the gravity, won't (shouldn't) it be the same as the Original Gravity at pitching?

I've got a few recipes that are good, and I want to record things correctly so that they are worth posting!

EOBG will always equal OG except in the case where a post-boil water or fermentable addition is made.
