Hi ya mike. I wouldn't rely on your hydrometer too much. If you are stirring and doing say a 90 minute mash (at correct temp) and a 90 minute boil of decent vigour and still get problems, you really need to look at your water.

Many guys don't do any of the above and never have any problems so water is a likely culprit.
