hey fellas,
i've read a few references to adding a second yeast culture during the fermenting. I used a second culture to restart a suspected dead fermentation. The beer was so good that between my mates and i it lasted about 2 minutes flat.
Your thoughts, pros cons.

wine/champagne strains take over when the funguys get tired. my menter uses wl099 when SWAt is needed... but it is able to really dry out.
