2nd BIAB spelt saison

After trying out BIAB after being a 3v brewer for 10 years, I'm hooked. First one was a simple blonde ale. No hook then, but it was easy. Yesterday I whipped up a hook and today I'm brewing no.2 a spelt saison. Cereal mash for the spelt as it's unmalted. Trying out the hook for the first time today.

Recipe is roughly 85% dingemans pils! the rest raw spelt. EKG hops at 60,30,5. Wyeast Belgian saison yeast. 1.055, 32ibu. Lots of gypsum to bring out the bitterness. 62c-90, 72-15, 76-5.

Another 3V to BIAB convert. I now use my mash tun as a cooler. All I had to do was take out the manifold. Who would have thought of that for a novel use of a mash tun? I am a jenious, geanous, genus, genious, err.. genius!
tap 1 Raspberry wine
tap 2 Bourbon Barrel Porter
tap 3 Czech Pilsner
tap 4 Triple IPA 11% ABV

Pipeline: Mulled Cider 10% ABV

Good on you Twinklefool. Quite a few of us here from 3V who have never gone back. Sounds like a really interesting recipe you are doing as well. Hope it turns out a cracker and that the brew day went well.
