Maple Oatmeal Stout (all maple sap instead of water)

Finally got around to giving this one a go, and took some pics along the way so figured I'd share...

First up, sap collecting...

Took a gravity reading of the sap, 1.01

Then lug the thing in the house to keep warm since apparently somebody forgot to tell winter that its been spring for a few weeks...

Only lost 1 degree over the 90 min mash, from 66 to 65 although I skip the stir and temp checks during mash. Did a 10 minute mashout and pulled the bag...

Did a 90 min boil, pre boil gravity was 1.051 instead of the expected 1.038, maple sap does wonders for your efficiency readings in BIABacus if you dont add it anywhere :shock: :drink: It was a pretty wet and humid afternoon so I didn't get a whole lot of evap and my post boil gravity was 1.058, and had a good half gallon more wort than expected after the boil, but not surprising with the weather conditions.

Probably put too much in my fermentor bucket so I just left the lid sitting loosely on top to prevent my airlock from ending up in the attic, but I hate to dump good wort. Anyway, all in all it was a good second BIAB brewday, and I'll post a followup come bottling time. I think if I don't get any maple flavour come through, I'll probably batch prime with my homemade maple syrup. Here is the litre and a half I made this weekend... (from 15 gals of sap)

Great read and pics :thumbs: and :lol:.

1.010 on the sap eh? That would have added around 13 gravity points to the brew.

I'm glad to see that the BIAbacus can handle this strangest of situations :). On your next one, start with a blank BIABacus. Fill in section B and then put a "1" under grams/ratios in Section C. Then keep changing the OG until the Gravity into Boil = 1.010 like this...

Now you know that the sap will add 13 points to your OG, there are many ways you can handle it. Personally, I would just remember that it will add ten points pre-boil and 13 points post-boil. Let's say your recipe wants to be 1.050, just set it up as 1.037. As I said there are other ways around this but you get the idea.

Thanks very much for the info PP, I probably won't be doing another sap brew until next year since the sap only runs for a couple weeks, but if this one turns out I will certainly do it again so I will make note of your suggestion. I am starting to get used to the BIABacus and how to use it more effectively, it really makes the brew day predictable and is a handy way to record the proceedings as well. I remembered from another post that you had a hard time picturing sap being watery so I figured I would post a couple pics of the collection process etc. Thanks again for the suggestions! :thumbs:

I appreciated the sap pics. I sort of thought it would be massively red and thick, more like toffee! Interesting stuff!

Finally got around to bottling this last night, final gravity came all the way down to 1.01 with US-05, and managed to squeeze 22.5 L VIP outta my 6.5 US gal fermenter (which must be more like 7(26.5L) to the brim, VAP was around 24L) :party:, no wonder it was such a messy fermentation :headhit: . I could not detect any maple flavour in my taste test, so I batch primed with homemade maple syrup. The taste test was delicious however, even while warm and flat, so I can't wait to see how it turns out when it is conditioned...

Good luck. This is my type of brewing. I am not brewing "In Style" much anymore! Unless it's a competition I brew for the fun of it (and beer of course) brew on experimenters. Of course it best to get the basics down first, but? Let the mind wander.
