First BIAB beer on its way

Good Day BIABers,
My first BIAB is busy fermenting. Brewed on Saturday using a 50L Urn. Planned on using 42L for mashing, but only filled up to 40L when i saw possible overflowing problems.

Mashed 7.5Kg of grain and expected around 1.056 OG and hit 1.055 (Sparged with 2L 70C water and 90min boil). Was worried that the home made bag might give in with the big load but it held nicely.

Used an immersion chiller to about 30C and dumped the whole kettle in my conical fermentation vessel. Not worried about haze as i plan on getting a beer filter and kegging solution in the near future.

So the BIAB parts went extremely well.

I have a bit of a problem with an overly active fermentation. I am usually able to keep the temp in my garage to 22C, but we are currently in the middle of a heat wave and the room temp is sitting at 25C. After 36 hours i’m down to 1.022 SG. Thought it would be a bit slower. There is very little Kräusen left and a lot of yeast has settled at the bottom. Still looks active, and should be done soon. I am a bit worried about the yeast producing off flavours at the higher temp. I’ll start draining dead yeast after 48 hours, do a little bit every day until day 7 and then prime and bottle.
Thanks to all for contributing to this forum. It was a very easy BIAB experience, i just hope i can avoid a banana flavoured beer ;)

Nice first post LB ;),

What did you brew and what yeast did you use? All should be good but letting us know this might help us to make you feel more confident.

80% Pale Ale
5% Munich I
5% Carapils
5% CaraAroma
5% Melanoidin

40g Northern Brewer at 60mins
25g Saaz at 15mins
20g Saaz at 5mins

Yeast: 20g re-hydrated US-05.

This is basically a mix and match recipe from ideas i got from other recipes.

Well done looBrew on your first BIAB.

I'd not be too worried about your temperature, yes 25 is getting up there but it's not like it's 30. I don't think you'll have banana flavours in your beer.

It amazingly turned out to be one of the best beers I have ever brewed (and it wasn't just me, my friends and family thought so too ;) ). Lesson to be learned: Relax and have a homebrew!!
