      Not sure if you all have much experience with WLP550 - Belgian Ale Yeast. Im very surprised by it. Pitched on fri at 20 deg. Finished ferment by Mon morning. 1.065 - 1.013 in 3 days. Ill leave it another week to finish up but it already lower than the target fg.

      I used it for a Biere de Garde and came out really good. Bit peppery and dark fruits. Would be really good for a dubbel or maybe even tripple.

   2. Oxidation & possible infection

      Bad day. Been a couple of bad days really. last 2 brews gone bad. To me they taste like oxidation has occurs. Lots of cardboard tastes.
      
      This may have been down to my own laziness. After boil I simply put cube up the tap on the urn (biab in a urn) and opened tap to flow down into cube, drop of maybe 300mm where it would have splashed on the bottom of the cube. This is where I am guessing the oxidation is occurring. Have bought a valve and hose so now will hopefully remedy this.

      Thinking the infection would have been from the starter or the cube. Gonna have a go and brew it again this weekend so fingers crossed it comes good this weekend.
