My father has a small orchard that produces more than our family can use, so I normally take the excess apples and make fresh cider from them, that is how I have done my last few batches. I prefer to use fresh cider to the concentrate if at all possible. I look forward to giving this a try.

I was thinking that once the fermentation has started to wind down I could remove the carboy from my temperature controlled area and just leave it at room temp, my home has A/C and we typically keep the temp at around 72 deg. F.

Thank you for the reply, I guess more what I was thinking is do I need to let beer age in the PV after the fermentation has completed or do I go right to packaging. I hate to leave it in the ferment chamber longer than needed as I would like to brew another beer that will need its space.

Belgiun white ale

Another question for the group.
I have been looking for infomation on brewing a Belgiun White ale slightly spiced with corriander and orange peel. Have any of you ever made this beer? Did you add the corriander/orange to the boil or to the primary/secondary?

I used a previously used spreadsheet and modified it for my recipe, I didnt notice that it had water held back, my plan is to do a full volume BIAB, but I ended up with to much wort on the last boil, so I would like to see if I can get a bit closer on this next one.
