I guessed as much, I've also been reading that if you have malt extract at the ready it's possible to use that to raise the OG by a few points.

it's fermenting away nicely with a nice thick head of yeast

well, it's in the fermentor - all 18Ltrs of it. the expected volume was 16.

the expected OG was 1038, I've actually got 1033 so I've missed the target by a few points, is it possible to add some sugar now is it best to leave alone?

I've made the tweaks that you recommend and things become a little bit clearer WRT the ingredient substitutions, thanks :clap: I've just put the kettle on to warm the mash water, so it's time to weigh out the grain and hops, here goes.....
