I concur.

I use a "banjo burner" which has a fairly disperse flame. I let my bag go all the way to the bottom and haven't had any melting problems in about 8 batches.

That's exactly what I use A large potato masher I bought at a restaurant supply shop.

It works great for busting lumps and general stirring.
A rapid up-and down motion really gets the grain off the bottom.

I use a 30 gallon Boilermaker for 12 gallons into the fermenters. Full liquor, no sparge. The biggest grain bill so far was 35lbs (~18kg).
