1. When to add specialty grains

  Tomorrow I'm brewing a Schwartz beer and my friend recommended adding the specialty grains (carafa I, roasted barley, chocolate) in the last 30mins of the 90min mash. He says adding them to early I risk getting a sour taste from the roasted husks, in the finished beer.
  
  He recommended bring the mash temp to 70 and then adding them for 30mins. Any thoughts?

  For roasted malts, I add them when I start increasing the temperature to do a mashout (and then do a 15 minutes mashout). During that time I stir the grains every 5 minutes or so.

  Just considering ways to simplify and shorten my brewday. I have a big 100lt stainless steel pot that I brew 50lt batches in using gas and a propane burner but it takes a long time to get it to boil and to mash temp. I can speed it up a bit by using hot water from my hotwater cylinder but then I don't have any hotwater for the rest of the day.
  
  So I was thinking about getting a heatstick like this one

  As I wrote previously I bought a 3kW heat stick to help speed up my brew day using it in combination with the gas that I previously had. And ...it rocks :thumbs:
  
  The advantages are:
  - I can get the kettle to mash temperature using just electricity which means I can insulate the kettle saving energy (for me it is a BIG 95 lt pot).
  - I don't have to get rid of the insulation when maintaining the mash temp, I don't even have to lift up the bag or anything, I just stir the mash with the heat...

  Just brewed a biab Schwartz beer 2 days ago and I was talking with my friend who also homebrews.
  
  After flameout he leaves it for a bit then swirls to get the trub in the centre then siphons the still hot wort into the fermenter and only then uses a spiral cooler to get the temperature down to pitching temperature.
  
  Sounds like a good idea to me as the near boiling wort should sterilise the syphon tube and the fermenter reducing the risk of infection.

  Despite my positive expierience with filling the wort into the fermenter after boil is finished, i´m going to try this cube no-chill method. The storage factor seems very interesting to me.
  
  When the wort is coold in the cube, is it an accuarte aerating to let it splash into the fermenterbucket?
  
  Until now i was stirring the wort with a whisker for some minutes. My old (aquarium-) pump with a sterilfilter is pretty much cleaning work, so this thing is getting dusty.

4. Converting propane burner to domestic gas (natural gas)

  Does anyone have any experience of this? I have recently moved to an apartment building where they don't allow propane tanks to be stored which makes brewing a bit difficult with the setup I have at the moment.
  
  I could just smuggle in a tank but I'm wondering if I could convert my system to run off the installed gas in the apartment. There are plenty of superfluous gas outlets in the bathroom and kitchen (attached to gas convectors/heaters I don't use).

  One option might be to buy an old gas fired water tank and use the gas ring from that as the heat source.
  
  An excellent idea, one that I had thought about and then forgotten. (I even went as far as collecting the water heater burner assembly from a plumber friend).
  
  I do know that a conversion from LPG to NG will require a different regulator and gas orifice as well as enlarging the burner holes.

  Does anyone have a tried and tasted SMaSH recipe (single malt and single hops)?
  
  I have access to cheap Weyermann Munich, Vienna and Pilsner malts and want to see how simply I can brew a simple beer.
  
  Also one of the great local home brewers suggested that beginners should stick to simple (smash) beers so they can learn to differentiate the tastes between the different grains and hops. What do you think?

  17 days ago I brewed 50 litres of the famous BIAB amarillo APA. After putting it in the fermenters it didn't really show much activity, which I am putting down to a leak some where on the fermentation buckets which is letting out the pressure somewhere. I'm not really worried that it hasn't fermented because there is yeast action but I can't tell if it has stopped or not. So I have some questions...
  
  What should the final gravity of the Amarillo APA be? It was 1.058 into the fermenter.

  Thanks for your answer...I just managed to measure my FG and it is down to 1.010 so it all looks like it is ready for bottling tomorrow. :-)
  
  It smelt great too... I've only had one offish batch but its always a relief to open the fermenter and be greeted by the Amarillo aroma.

  Just finished my first biab today brewing 25lt of the APA featured in your spreadsheet (NRB's All Amarillo American Pale Ale). It all seemed to come out OK, even if my mash was a few degrees hotter for the first 5 minutes or so. Hopefully nothing to stress about.

  A quick update on my demonstration brewday at university. It pretty much all went OK, all gravities lined up with recipe.
  In the end I went with a borrowed immersion chiller for cooling instead of nochill, my reasoning being that the students can see the process of sanitation and casting in the yeast mixture.
