Hi Folks,
I've been looking at some stout recipes lately and many of them have small amounts (200g-400g) of some grains, I can only buy grains by the Kg and have no problem saving some for a later brew, but not having a mill I get them crushed at the shop.How long will they last crushed? and should I store spare grains and hops in the fridge?

Hi Scott, I believe and I'm no expert, that crushed grains need to be used within a month or so. Unless kept in vacuum sealed bags. I buy my grains un-crushed and mill them myself. this way they will keep for ~12 months in a good container.
It might be an option for you to buy the small amounts of grain (in 1kg lots) and measure out what you need for the brew and crush them with a coffee grinder or similar? Until such time as you can afford to buy a decent grain mill.

Scott, as per hashie's great advice, specialty malts should keep for a year in unmilled form, so I'd get them like that. Also, the coffee grinder or blender attachment is just fine for small amounts, even a rolling pin would be OK.
If you can store grain in the fridge it will be ideal for longer storage, just seal it well as the humid atmosphere will wreck specialty grain. With hops, some store in the freezer however some suggestions lately from retailers are that just the fridge is best in some cases (particularly whole hops). I store mine in the freezer, mainly because my fridge is usually quite full and there seems to be no ill- effects (that's on pellets, plugs and whole hops).

crushed grain can be kept for up to a year if it is stored safely. Keep it dry (moisture is a big threat) and away from mice/rats/other vermin. To keep the moisture out consider this.
You might notice a drop-off in effiency as it ages, but provided it's kept well should still be ok.
