I am putting together a single hopped beer using Motueka.
Anyone care to recommend what you think would make a better base? Pale wheat style or APA?

Pale Ale would be my vote, keep the grain bill really basic use some Maris Otter or Golden Promise with 5-10% medium crystal. :-)

Indieg - Similar to what Lazycat brewing said; try a SMaSH (single malt and single hop).
If you use pale 2 row or similar with that Motueka, you will get a better idea of the flavour contributions.
