No chill container expanded after it contracted!

Post #1 made 13 years ago
I've been away from this forum for a while, as I upgraded to a mash tun and don't do BIAB anymore... but I still continue to use the no chill cubes because they're just easier to deal with and don't waste water like my wort chiller does.

Last Saturday I brewed an Oatmeal Stout and immediately put the hot wort into a cube and closed it off. Within a few hours, the sides started sucking in like they normally do. After a couple of days of the sides sucked in, I noticed the cube had expanded and the sides were maxed out as wide as possible. I didn't think anything about it and finally decided to put my wort into a fermenter tonight.

As I opened up the spigot, wort shot out as if it was under pressure. It also smelled a weird smell, like a smoky/hoppy smell if you will, and tasted a little off as well...

I proceeded to put it into the fermenter, added my yeast, and it started bubbling immediately..

Did my wort get contaminated at some point? Could it have sucked some air into the cube and something weird got in my batch? It was sealed, so I didn't think that could happen.

Any ideas?

Thanks!

Daddyo, your correct, Something in the "cube" did not get the HOT wort on it. Most of us turn the cube over the top and sides many times since it take 1 or 2 minutes to sterilize the uncovered sides and cap,

I found it still better Iodiphor the cube before no-chill!

I soak my cap in StarSan and also put 2.5 gallons of StaSan solution into my cube and try to get it on all sides before I use it for wort. I think I was in a hurry this time though and didn't get any on the top of the cube.

Should I just dump my wort and start over?

Infected (hopefully just wild yeast). Probably going to be ugly but let us know how it turns out. Do keep in mind that anything it touched after being in the no-chill cube may likely be infected (siphon, tubing, fermenter, etc.). Be sure and clean the heck out of everything to avoid picking up a resident bug.
