Many thanks again for your contributions. Your numbers have now been collated into a spreadsheet and we can already see that mash time certainly makes a difference that is worth quantifying.
It is also more obvious now as to what figures we need from you. If you are brewing over the New Year period and have time, could you please take a few extra measurements for us?

EDIT: Added brew date of February 16th.
I did a MAXI with 2.5 gallon water held back from mash,
this water was added before the boil.
I planned for a 60 minute mash, but didn't hit my
gravity, so I went for a 90 minute mash.
I hope this info helps..............

2. At 40 minutes, my gravity reading was... 13 brix/1.053
3. At 60 minutes, my gravity reading was... 14 brix/1.057

I'm originally from Africa, anything less than 25C is freezing . It was a very mild 0c to 2C with intermittent ice rain showers and hail.

Did a Hochkurtz mash yesterday for a Dunkel (from Brewing Classic Styles) and took the gravity after each rest:
20 minutes at 55C  1.010
50 minutes at 62C  1.028
50 minutes at 70C  1.035
15 minutes at 76C  1.038

I'm a pushed for time at the moment so I'm trying to do as many brews in a day/weekend as possible when I've got some spare time. Overnight mash means I can do 2 brews on a day AND have some family time in the afternoon. Yep, as you say, heat water, mash in, insulate and hit some zzzz's.

The estimated gravity for the brew (Saison from BCS) at that point was 1.049 so the 1.050 is "expected". The jump from 1.031 to 1.050 is not, and most probably incorrect but I don't want to leave it out  that would be massaging the results. I've cooled and measured the sample the same way as all the others. Who knows, I might not have stirred the mash enough before collecting the sample?! One thing that might be of interest in logging these results would be to note if you stir the mash while heating it to mashout temps. I do, and it seem beneficial. But it's WAY to early to draw any conclusions.
