Belgian Christmas Ale

This is the recipe for a Belgian Style Christmas ale that I brewed last week. I say Belgian style, as I've dropped some of the complex malts in favour of simpler alternatives, hoping that it will age and come good in time for this Christmas.

On with the recipe:

Style: Belgian Dubbel

Volume into Fermenter: 10.8L
OG: (after addition of sugar) 1.058
Expected FG: 1.012

Grain Bill:
2.280 kg Marris Otter Pale
0.500 kg Crystal Malt (60L)
0.225 kg Biscuit Malt

Hops:
22g Mittelfruh Hops 5.3% AA

Yeast:
WLP575 Belgian Trappist Blend

Mash:
62C for 60 minutes.

Boil:
22g Mittelfruh - First Wort Hops
10 min - 1/2 Whirlfloc Tablet
Flame Out - 120g Sugar

Notes:
I started fermentation at 21C and have been increasing the temperature ~1C per day up to 28 (as close as my water baths will allow me to control this anyway)

I've attached the calculator here, that shows I had a little more boil off than predicted, resulting in only 10.4L into the fermentor on this run. Also need to calibrate my new hop filter a little better when calculating the boiler dead space I think. The other thing to note with the calculator here is that the OG is quoted as being 1.052. This doesn't take into account the sugar addition at flame out, which isn't mentioned anywhere on the spreadsheet as I was unsure where to factor it in!

I've just taken a hydrometer reading today after 10 days and it's at 1.020, the sample already tasted fantastic, good body but the taste was quick to fade. Hoping that improves with a bit of ageing.

Nice one aj,

Thanks for posting the calculator, it will save a bit of work when scaling.

I'm gonna do this at the weekend,I've been wondering what I could do to use up some Biscuit (Victory) Malt. I've also got a bottle of Duvel so I'm going to try and recover the yeast.

My only problem is the hops, I haven't got Mittelfruh in stock so I'm looking at using some Syrian Goldings.

I hope not !! I found a thread this afternoon where a guy recultured it and used it with success. I was going for Chimay but couldn't get any.. Need to look for that thread again.. :headhit:

Nothing is more important than cheese right now! Since I am again on the BeerFast. Food means nothing! I can't get too excited about beer because I am drinking it 8 hours or so a day!

Priming yeast and fermentation yeast are used by Duvel. You have a chance to get a copy of the right yeast but I doubt it. Keep at it!
tap 1 Raspberry wine
tap 2 Bourbon Barrel Porter
tap 3 Czech Pilsner
tap 4 Triple IPA 11% ABV

Pipeline: Mulled Cider 10% ABV

Brewed this yesterday, the only change was the Crystal, I only had Dark (120) so its more of a Strong Dark. :yum: and I upped the OG to 1.078 for hopefully a 8%+ brew. Its actually in the cube at 1.083 so I'm thinking to just let it ride and go for 9% + depending on the attenuation of my yeast, which by the way is still open to debate as my Duvel recovery plans have not worked. Thank the gods for no chill :thumbs: I might (have to) go with Safbrew T-58.

Oh and I need a pulley, 9.2kg (20LB) of wet grain is a bit of a chore to lift and drain :argh: I nearly ripped my sack :sneak:

I've got some WLP550 on slants if you are interested... You'll probably have to build a HUGE starter. The 550 is, as far as I know, a Duvel yeast.

Yea :thumbs: that would be great cheers I'll send you a PM, let me know what the postage is. My recent brew is going to be Dark as I only had dark crystal, I'm keen to give it another go but with some light so to keep it golden. Your slant will come in handy for that.

I went with the T-58 in the end, I made a starter and let it double up then pitched. I wasn't too worried about it being stressed with all that gravity. I gave it 8 hours at 21.5c then knocked it back to 18c. I'm now ramping it back up to 24c in daily increments of 1 degree.

Talking of slants: I've just got back into the yeast thing and I've still got some slants in the fridge from May. I'm going to re do them next week as they are 6 months old now. I might even get back around to the idea of freezing. I read somewhere about keeping yeast in oil :think: I'll have to google it.
