Rice Dudweiser

Just thought I would document my american pils that I did a few weeks ago.

I am hoping it will turn out to be a 5% ABV very pale, quaffable spring/summer lager (UK).
3Kg Lager malt & 2Kg rice.

The brew has fermented out & is now lagering for a while. chucked in some isinglass after racking, and will probably polyclar it in a week or so. :thumbs:

BTW - If anybody that is mentally disturbed enough to try and copy this, be aware that unless you have some high diastatic malt (or amylase) available, be prepared for a very long mash day. Mine was in excess of 8 hours!!

Haha Mally, I just didn't feel like googling the " reasons why anyone would use high diastatic malt (or amylase)".
Never having used any rice in my beer I was/am not sure about what you were up against.

Hi Mally

Ive done 2 rice lagers recently (second still lagering) I didn't have any problem with conversion.

The last one was 85% galaxy 15% rice. The first one was pilsner 80%, rice 15%, carapils 5%

Basically around 2kg of rice in each. I pre cooked the price in another pot till it was good and broken down. Then added it to the main pot. I used about 10L of water cooking the rice, so when i filled the main pot up I took this into account.

When i mashed the grain in the rice pretty much liquifys, there were little chunks of rice left after 5 minutes, but not much. Its pretty cool to watch actually, enzymes at their best. If anything my efficiency was too high. The first one ended up with 1055 OG when I was aiming for 1050. The second I aimed for 1047 and thats pretty much where i finished up.

Just reread your post (its 2am here so I may not be at my best) and realised that you're up at about 40% rice. Thats pretty damn high, and yes you'd need some good diastatic malt to chew through that lot ;)

Is this the rice to grain ratio of a typical american pils or are you just taking a guess?

My first one tasted a bit too alcoholic as it came out about 5.5% abv, but after a couple of weeks in the keg it has settled down and is tasting pretty good. It is really straw coloured and is definitely an easy summer drinker. I used wyeast 2278 czech pils yeast and was trying for more of a dry sapporo style of japanese lager

I was trying to push my "diastatics" to the max, rather than copy any particular recipe.
In fact I was also trying to see how pale i could get a lager too. (though I suppose it is very loosely based in Budweiser though).

After 8 hours, the enzymes had packed up & left & i still had chunks of rice left! (yep still unconverted starches too).
Rather than dump it I thought, i would ferment it out anyway & chuck in some pilsner enzyme to boot. That should hopefully help with any starches/dextrins & help to dry it out as well.
If any are left in there I will just hope to clear with time/gravity/isinglass & Polyclar (who knows, but I love experimenting).

I should have hit 1.0485 OG, but got 1.044 so not too bad.
My last gravity check i got 1.006 (but my other hydro was saying 1.0000) so not sure where I'm at other than between 5-6% ABV & bone dry!

I guess in a month or so I will update with pics (if it is drinkable).

Just having a better look at your photo, how long did you boil your rice for. From what i can see it still resembles a grain. Mine was cooked almost to mush.

I reckon you'll like the colour, i'll take a photo of mine when i get a chance its pretty damn light.

It was still grainy. Not by choice though, I boiled for about 20 minutes but then it began to expand so much that if i added more water it would have come out of the pan! I had 2Kg in a 6L pot, and it was brimming.
In an ideal world i would have a bigger pot, or do a smaller percentage of adjunct, but as I mentioned it was a boundary pushing experiment/experience.

I actually thought about pulverising the rice in a blender (whilst dry) so that you wouldn't have to boil for so long, but maybe next time?

i look forward to any pics you have, I can compare colour then.
In fact I really appreciate any advice you guys (PP, Beachbum et al) have, as you seem to be real lagermeisters. My next one is Nev's Tettnang Pilsner :yum:

Mally, If you Crush the Rice too dust, and add 2 pounds of rice dust in 1 gallon of boiling water for 10 minutes, You will gelentize the rice and have very well mashable starch.......Also so great Breakfest Cereal(Cream Of Rice)

If you use "6 row pale Barley" in the 60/40 recipe, you will have all the Diastatic enzemes to make a great dry Lager

If you really want a really dry PALE Lager with minimum Grain flavor, use 60% Malted Wheat, instead of Barley!

Yep, had the same problem mally,2kg of rice really expands. I started in a 6kg pot the first time then had to change to a keggle half way through.
