I am doing my first wheat beer this weekend for my birthday.
The grain bill has 5lbs of malted wheat in it which I understand from countless internet searches, can help with head retention.
Grain Bill:
5 lbs malted wheat
4 lbs 2 row barley
1.5 lbs 30L crystal
.5 lbs Munich
1 oz Hallertau at 45min
1 oz Saaz at 15min
Have not decided on yeast, yet. Perhaps the WY 3942, Belgian Wheat or the WY 1010 American Wheat...looking for something that I can "slam"
on a Georgia HOT day...

I found that only 10% Wheat of a recipe will give you Great Foam, and if the Glass is CLEAN, a Great Lacing.
