Ok...newbie question!

If I do a mash, boil it and leave it to cool overnight. can I pitch the next day if left in the boiler, taking into account that the wort and boiler would be sterile due to before mentioned boiling being done?

It would split my brew sessions and make life a little easier, ie brew session one evening...finish the next?

What's the thinking on that? :shoot:

Some good answers on that link Joshua.
My personal preference would be to use a no chill cube rather than leaving the wort with an air pocket above it. I was using the ones with taps and did have a couple of infections admittedly though. Mine were from the tap location at the bottom of the cube. The exact same cube can be purchased with its intended use as a jerry can. This has no hole for the tap.
Saying that, looks like lots of people are using the towel method and its working for them.

K, the heated towel is over the Kettle, under the lid.

With BIG pots, Use Large Triangle Clips or a Bunji strap, to prevent a wet towel.

You can hold the lid upside down, place the towel on the lid, and flip the towel/lid right on top the Kettle!!!!

Then, the Next day, I pulled the Lid off and the Towel found the wort...DOH.

Tie the towel down.

Side note, Wine Makers use clean bed sheets, on Large "Open" fermenters.
