clarify the beer using gelatin

I saw this video that explains how to clarify the beer using edible gelatin,

I have a few doubts about this :scratch::
1. The beer if I cool it up to 1 degree, the yeast dies and the second fermentation in the bottle I need to put more yeast, no? :think:
2.Using edible gelatin, I reduce too much yeast cells to ferment in the bottle? because I saw that the video refers to the use of kegs.

I've never used gelatin, so others will have better advice on the subject.

Your yeast will survive at 1C without issues. They will actually survive freezing temps, but you would want to avoid freezing your beer. The issue with freezing is that the yeast cell walls can get punctured when ice crystals begin to form. Beer typically freezes around -2C.

I think the worst case scenario would be that your beer would take a little longer to carbonate.

Like Jack says the yeast wont die but chilling down to 4 deg even will improve clarity. It will drop a lot of your yeast cells but you will have enough to carb up in the bottle.
With bottle conditioning you will never get perfect clarity but pretty good can be achieved. Brewing is a game of accepting losses and conditions.
Max clarity would be chill, add finings then filter and force carb.
I bottle all my beers so im happy to add finings crash chill and live with a small amount of sediment. Ill dig up a photo of a pilsner i did last year. Came up pretty good with this technique.

I have used gelatin lately and have no trouble with it. I keg so I have no experience with gelatin and bottling. I would expect that using gelatin and bottling would still work but maybe take a little longer to carbonate? Or you could use Prime Dose™ Carbonation Capsules http://www.northernbrewer.com/shop/brew ... count.html

It has sugar and yeast in a capsule so that a yeast-less (low yeast count?) beer can be carbonated with just one Prim Dose!
