Boil too short so OG too low - how should I fix it?

Post #1 made 13 years ago
Hi,

This is my first post and I'm a new brewer so please excuse me if I don't get some of the jargon right!

I brewed this morning using the BIABacus to scale the recipe, but I forgot (and don't know how) to tell it that I had a 60 minute boil, not 90 mins. Now I have a wort at 1.042 instead of 1.046 and I want to fix it instead of having weak beer.

I have two ideas:
- boil for 30 more mins, add more aroma hops near flame out
- add DME to get the gravity up

What would you recommend, why and what effect on bitterness, flavour and aroma would there be?

Cheers and here's to beer!

I would not mess around trying to fix it. 4 gravity points = 0.4% ABV in the end product. Seriously, chalk it up to a learning experience, move on, and make more beer! I can assure you that this batch will turn out fantastic as is. I've had many excellent tasting "mistakes".

Good Day Dave, If you pulled the Hops, you will need to re-hop to get the Desired IBU at 90Min, and finish the boil with the Hops needed. Maybe More Flavor and additional Aroma.

Adding DME will raise the Gravity, but, wont help the Bitterness.

SO, If you ran the recipe with Bitterness, Flavor, and Aroma on schedule at a 60 minute boil......1.042 and 1.046 is not very different,

The only thing is the slightly larger volume, and about 0.3% lower ABV in the Finished beer.

Life is long, I would ferment this batch AS IS. See how it Finishes, and Move on to the next batch.

As Todd and joshua have said Dave, this is definitely not a worry. All's good. You will have the same thing happen again in the future. For example, on one brew day you'll have more evaporation than on another brew day especially if you brew outside. You'll also get odd readings so it is always important to take a few readings of different samples to confirm a reading.

The effect of four gravity points on bitterness etc is minimal. You'd be hard pressed to tell the two beers apart side by side. (Much less so than if you did add DME ;)). You can play around in The BIABacus though in Sections N and O and these sections will tell you the effects on bitterness (more importantly) bitterness to gravity ratio if you do make pre-pitching corrections. This can help in the decision-making process as to whether a wort should have any pre-pitching corrections made.

So, all will be fine.

Not sure if there is a question here or not? Are you clear on how and where to change the boil time now?

I think I'm an idiot... (well I know I am in general, just think it's had an effect on this occasion) I might have had a measuring error - I just resampled after transferring to FV and the gravity was 1.046, the target. I'd take another sample, but I broke my wine thief today. Maybe I have a turkey baster I could sanitise...

Pistol - you're right, I still don't know how to adjust BIABacus for a shorter boil. Is there a way?

Oh, I did set that right! Shouldn't have been so unconfident, latest sample was 1.045 so I think I'm very close and shouldn't worry.

Guess I got a bit shaken by lack of time / slew of other errors:
- cracked tip of wine thief, left shard of glass in wort (will pass through sieve and muslin before packaging so I'm not overly worried)
- used no chill cube that was too small do had to pause mid siphon to find more vessels
- cube fell over during siphon, spilling hot wort on kitchen floor
- first go at whirlpooling, end of hose sucked up too much trub and hops

You might say I'm in the experimental phase of my brewing system build!

Thanks for all the help and reassurance.

Dave Ing,

Sounds like a regular brew day to me? Take care and relax. Brewing gets easier each time you do it. You still screw up, but previous brews make brewing more enjoyable.
tap 1 Raspberry wine
tap 2 Bourbon Barrel Porter
tap 3 Czech Pilsner
tap 4 Triple IPA 11% ABV

Pipeline: Mulled Cider 10% ABV
