What size fermentation vessel?

Hi all,

I did my first all grain (a Krispy Kolsch)2 days ago and I used the full volume BIAB method. I made a yeast starter and used a stir plate and OMG the fermentation really took off! the air lock got blown right out of its hole and foam was pouring out. I rigged up a blowoff tube and submerged the output in a big jug of water and things are bubbling, growling and chugging along.

My questions are;
1-How big should my fermentation vessel be for 23 or 24 l of fermenting beer?
2-Should I routinely use a blowoff tube after pitching?
3- Is the a better method I haven't mentioned?

If you are using a carboy for fermentation then you should always plan on a blow off tube for the first 24 hrs or so if you aren't going to be able to keep a close eye on it.This includes while sleeping! Many of us are using the pail type fermentors now, with airlocks.These allow a lot of head space and are fairly cheap(and light).I use both,as being an amatuer voyuer,I like to watch the fermentation through the glass. :lol:

I am using a 30 litre plastic fermentation bucket and I filled it with 24 litres of beer. I was surprised that there wasn't enough head space.

How much volume above the beer is needed for a 23 or 24 litre batch?

Good Day ValveFan,
I have found the Haed space needed for a very large foam(krausen) to be 150% of the beer volume, You may need 36L tank.

BUT, there is a way to drop foam called "Fermcap-S Foam inhibitor" see your topic http://www.biabrewer.info/viewtopic.php ... t=ferm+cap and you can use the 30 liter with NO Blow-off tube.

Thinking of getting the fermcap myself.

The krausen really depends on the yeast strain, beer and how vigourous your ferment. I've seen WY3068 nearly double the size of the brew with krausen.

I sometimes do 20L in 25L buckets, and yes, I do need a blowoff sometimes.

And I've recently begun doing 60L in 60L fermenters (about 5L of headspace).... no where near enough room for a vigourous ferment.... but the blow-off helps, and, I want to try the fermcap
