Over Pitching

Being a little bit lazy I pitched a 3rd 45L batch onto the same wyeast 1272 yeast cake. In hindsight i know it was a stupid thing to do, but hey I do a lot of stoopid things and its never stopped me before.

So this batch was so ridiculuously over pitched that by the next day my 70 litre fermenter had a massive cling wrap bubble on top barely being held on by the rubber O ring and a whole pile of gunk had oozed out and down into the fridge.
Here's what it looked like after I cleaned the fermenter up

The ferment went from 1046 to 1010 in about 24 hours. What is this crazy fast overpitched ferment going to do to the beer? I did set the fridge temp lower than usual, so i think that managed to stay under control

You may have some Strange Flavors from the Fast Fermantation.

But, If you secondary for a couple of weeks, it should be good!

After? Would have loved to have seen the before photo :lol:. What a cracker Stu! The thing looks like it wants to explode again :P.

How on earth do you lift that thing in and out of the fridge? Steroids?

I know, I should have taken a photo before i took it out of the fridge. It was a hell of a mess.

I can lift the fermenter very short distances, so i can lift it out and onto the ground. When im kegging I lift it onto a table with wheels, roll it over to the bench and then the have to lift it up to chest height without distrubring the trug.... thats the hard one

Lol!

I wouldn't mind trying that American Ale II yeast. Had never even heard of it until you mentioned it a while back. I washed US-56 (American Ale 1 dried equivalent) for over a year once and never had any problems so you might be able to do the same with this one? I used to use it within say 4 weeks from memory but this could have possibly been a lot longer - can't remember :).

I really like the 1272. Its described as having a bit more fruitiness than american ale I (us-56) but honestly, I don't think it has much fruitiness at all! I tend to think it is every bit as clean as 1056.

Plus it flocculates better so you can acheive clearer beers sooner.
my 2 cents.

But that is an impressive foam on the cling you got there. Even with the fast fermentation I'd be inclined to leave it for another few days to clean up a bit just in case.

Yes exactly what I was thinking. It was down to FG in about 2 days, but i've left it going and will probably cold chill today or tomorrow.

Im a big fan of the 1272, i think its gives more character than the US-05, but as you said it floccs soooo much better.

PP dropped in for a beer last night so i sent him home with a couple of vials of 1272 to try. I reckon he'll like it

1272 wasn't the only thing I scored. Thanks for the terrific beers Stu. Perfect end to the day and start to the weekend. That black IPA is excellent! :yum: :yum: :yum:.

I hope you get a crane for Xmas to lift that fermentor :lol:.
