Missing 10 points

Hi all,
I've just brewed the specialty saison from the brewing classis styles which suggests that I should end up with 1.070, however according to the calculator and in reality I ended up with 1.060.
The grain bill is very simple at 5.67kg of Pilsner and 0.45kg of Munich.
I did a double batch so followed the calculator and used 10 kg and 0.794 kg respectively and I mashed at 64 for 2.5 hours.
So the calculator was on the money so how n earth do I find an additional 10 points?

Hi there Brendan :peace:,

In the book, the specialty saison all-grain option is not written very well but your grain bill should have also had 340 grams of wheat malt and 450 grams of sugar.

Try and move away from The Calculator now Brendan as the BIABacus is far more powerful and useful. For example, the Calculator, like all other brewing software, requires you to input a kettle efficiency figure whereas the BIABacus looks at your brew and "intelligently" calculates it for you.

Finally, if a new brewer had asked this question I would have done the standard (and correct) answer on this site of, "You can't tell anything from one measurement on a single brew," and also linked them to this post. I'm glad I knew you knew this otherwise I never would have even opened up Brewing Classic Styles!

Thanks Pistol,
My apologies for poor wording, i use the biabicus but still call it the calculator ( some habits die hard )
Thanks for pointing that out, i think every fault or problem i have ever had with brewing has been because of not reading the information correctly, or not checking the box to the left that clearly states....... etc etc

Anyway thanks for the answer, i was puzzled by this one as i read and reread what i thought were the ingredients and am confident of my cough cough "equipment" :thumbs: and brew process as i seem to hit the numbers most every brew.

All well might just throw some us05 or some American Ale on this one see how it goes and rebrew the Saison :smoke:

Ah, good stuff! (I thought you were using the BIABacus so was scratching my head a bit ob that one :).

There is bugger all wheat malt in that recipe so I can't see that making any major difference. Maybe just throw in the sugar and see what happens?

I always struggle when trying to hit 1070 no matter what biabacus or any other program says I always end up with around 1060 to 1064. I had just written it off as an efficiency thing with higher gravity beers in biab. I don't brew over 1060 very often so I don't really worry about it

Brendan,

Looks like you may have your question covered, but I wanted to offer an additional suggestion.

I find my end of boil gravity AND volume very dependent on my level of boil intensity. I generally do a 90 min boil, and if the boil is even just a bit on the low side, my gravity will be low, and volume will be high.
