Too many cloves!

Post #1 made 10 years ago
Morning All,

I've recently bottled a high gravity Saison which I put in a secondary with plums cooked with (too many) cloves. It's been bottled about 2 weeks and smells absolutely fantastic but when you drink it the flavour of the cloves completely overpowers everything. I'm planning on leaving the bottles alone for at least 6 months so does anyone know if the clove flavour will die down or do I need to get used to drinking cloves?

Thanks,
Gianni

I hope it gets better for you, I absolutely despise the taste of cloves so I am of no use to you in disposing of it.

From what I remember, from my Ex-Wife.

Ethyl Alcohol will extract nearly All the Clove oil that that Spice carries.

It would be better to Boil the Cloves, as you Do with Hops(or Skip the last hop additions).
And still add the Plums/Prunes to the Secondary.

If you can brew another Batch of the high gravity Saison, and Ferment it with Out the Cloves, you can Open a few Bottles, and mix them with the Second Batch, until you have the Flavor you like. add a bit more Sugar, and Re-bottle.

JMHO.

Thanks Joshua - very useful as usual. I'll have to see if I can brew another batch.

Lylo - You are right about the clove flavour coming from the yeast but I thought I would boost it by adding some more. The trouble is I boosted it a bit too much!
