Safbrew BE-256 Abbaye dry

Thought I would share my recent brew experience with this dry yeast. Just brewed a Belgian Pale Ale based on a recipe from Brewing Classic Styles by Zainasheff and Palmer. Instead of using a liquid yeast from the recipe I went with the Safbrew BE-256 Abbaye dry. This was a 3 gallon into a 3 gallon c...

Brewed the Lost Abby Imperial Stout that Rick introduced me to. Thanks again Rick for the help and advice! 3.4 gallons stove top (12.8L) VIF Reached 1.018 FG from 1.092 OG - very happy with that. Apparent Attenuation of ~79% - about 10%ABV 90 minute mash at 148 F (64.5 C) Used Wyeast 1028 London ale...

goulaigan,
When you use the organic juice do you compensate the grain bill or TWN with the fact that your adding juice in the fermenter?

In his book he talks of going with Apollo as a change from his original recipe, which used Perle and Willamette, for the grapefruit and citris quality (sounds like you have plenty of grapefruit flavor already  ) His other major change is the round-trip mash schedule. I will likely be brewing th...

It is pretty crazy as a very very broad style. I personally like the pepper and funk taste on occasion. I look forward to hear your results knowing there will be a good lesson or two.
By the way, it sounds like your student has the upper hand on your brewing plans.

OK, so today was the great "Dead Guy Taste Test Comparison" and it has been called a resounding success. Color match was perfect. Smell - could not note any real difference Most importantly the blind taste test by 2 people noted only a small difference (both were able to select the dead guy) ...

My plan is to do a saison or Biere De Garde next. When I did the brew from Brewing Classic Styles I did a single step and as I stated above it tasted good and a worthy repeat - my yeast prep, don't yell - was nonexistent, I just tossed in the two packs of Belle Saison dry onto the 3 gallons of wort ...

Sure MS – Remember I use an 8 gallon kettle (30.3L) on the kitchen stove… Perle 5.4%AA 1.28 ounces, Sterling 8.7%AA 1.01 ounces = 40 IBU(Tins) I funnel / screen pour my wort into the fermenter – captures the leftovers and airs the wort pretty good. I used BRY 97 West Cost Dry yeast - about 64F when ...

So I brewed it once and as you can see from the pic above - came out nice. As Contrarian said it was pretty simple as far as some brews go. 80% of my grain was pilsner, some equal parts of wheat and munich, touch of caramunich and about 3/4 pounds (335 grams) of cane sugar. I was doing 13.7L (3.6G) ...

I just did a quick google - looks like the recipe is floating out there from a past pod cast by one of the authors (at least that is what one reference stated) The recipe I did was called Raison D'Saison - I used hallertua hops and Belle Saison dry yeast. Like I said the recipe was good - the beer h...
