      Hey Guys
      
      For my next batch ive planned to do an Aussie Lager. Reasoning behind this, is I really want to push my skills and knowledge further, and I reckon this style is one to do it on as there is nothing to hide mistakes behind.
      
      I've got the recipe nailed down, however I'm a little unsure on fermentation as ive never done a lager before. After the do's and dont's and any advice you can give me. Yeast i'll be using is S-189...have chosen this as it sounds like it will give me the clean...

      Since I now have 6 kegs to fill and brewing time is not available I used a fresh wort kit but I brewed my first lager with PP's method mentioned above, more or less. It's been in the keg for a bit over a week and tastes great. A bit bitter but another month or so will fix that.
      A week at 9c, a week wondering up to 17c (the STC turns on at 18c) and a week at -1c. I don't think it ever reached minus 1 as my little diy extended bar fridge fermenter was struggling a bit. The stc said -1 but the...

      Im currently on a 50l gas fired keggle setup. Whilst its simple and makes beer well...ive been doing some reading up on other systems people have come up with...and my current situation and equipment have got me thinking...

      Im loving my electric kettle. Its 5500w on a 65l pot which is a bit over the top but I have the luxury of an electrician mate who installed a new power point. I got a cheap potentiometer control of ebay too rated at 9500w. I think 2200 will work on a 50l pot. I went electric so I could brew indoors away from my 18 month old son but out of the weather. It was 3 weeks between my 2 and 3rd brew. I gave every thing a rinse and then boiled again after my 2nd brew. After 3 weeks I opened the kettle...

      Well i just cracked a hefe that i bottled 2 weeks ago just to see how it was coming along...and this is one of those brews where you go damn! I should of just left it the way it was! :lol:
      
      The first batch i made...in my opinion was a cracker...bitterness was perfect...had a nice creamy head...and a nice whack of banana with just hints of clove.       The bottles and lids appear to have been designed specifically for the tap king unit...the lids are a non standard size and ive not seen anywhere online where they sell pet bottles of this size. Would be handy if you could get a blank cap to put over them as this...

      Just after a bit of a starting point formulating a recipe. While the aim of this is to ultimately come up with my own unique beer...I quite like alot of the flavour characteristics of innis and gunn original, and am thinking of knocking out a batch in a similar style.

      There is some info about this beer and cloning it on HBT, not sure how good the integrity would be, but a good starting point?
      
      I have never actually heard about oaking wort prior to fermentation.
      Doesn't sound unreasonable, but I would always be worried there was something remaining that survived the sanitisation. :dunno:
      
      I boil oak chips for 5-10 mins and put into racked beer for however long is required (conditioning).

      Would a medium pressure variable reg be ok? That'll be perfect pist. That's what I have and I can boil 60 litres of wort with it no problems.
      
      I do make sure I pull the Ball Valve apart completely after every batch. Good on you! Hopefully yours isn't too time-consuming.
