Bitterness can sometimes be mistaken for astringency. Did you chill the "astringent" beer differently from the others? Eg, leaving the wort an extra 20 minutes post f/o before turning on the chiller?

Turned out real nice, no tweaks planned. An earlier version had had feedback to increase the bitterness a little, so I did that.

Would there be a risk of that Winpak product cracking as the wort cools and shrinks? Either that or you don't have a proper seal. I think that any HDPE water storage cube or jerrycan would suffice and also allow for shrinkage.

If only 5L, then just use an ice bath to chill (ie, sink with some water and ice, pot into sink). I wouldn't risk no-chill in anything glass.

Having just tried the lemon juice trick from a few posts above, can I just say that it is incredibly effective at cleaning the crud off my Crown urn concealed element cover. A bit of juice squeezed on, leave for a few hours, then just wipes off. Very simple and cheap, and very effective.
