well, this is what I did in the end. A friend lent me a Braumeister to play with, so I did it in that, but no reason why it wouldn't work with any other BIAB method.

turned out nicely. certainly hoegaarden-ish. about to make it again, so it obviously worked :-)

not sure I understand the problem? have you got any photos? do you mean you can't get the little metal bits to locate in the recesses in the side of the bottle or do you mean that you can, but that that it still won't seal properly?

homebrewshop seems to do a good online range. Brewbitz is near to me to.  If I were you, I'd try talking to your local microbrewer though. see if they will let you have some malt or yeast. warminster maltings are good for 25kg sacks, but the postage gets a bit much when you're sending kilos of malt ...

sorry for not responding - been away for work all this week. the red warnings say that the mash volume is approaching kettle limits and the vol into full mash is just under the kettle limit - I took this as a warning rather than a "this will not work". Is that right?
