      I've just come back from a week in the US and while I was there I discovered a bottled beer from the Brooklyn Brewery, I think it was called Brooklyn Brown Ale. I thought it was really really good. I'd never tasted an American Brown Ale before.
      I've only recently got into BIAB and on my next run I'd like to do a similar American Brown Ale.
      Does anyone have any recipes that are similar to this beer?

      I brewed this a couple of times, many years ago. It's something I'd like to brew again. Once, I doubled the recipe for the same volume and ended up coming in at a 1.080 OG, it was so well balanced that one 12 oz. glass got my gf passed out.

   2. craft beer in Las Vegas

      I've off over to chilly Las Vegas in 2 weeks for a week with work.
      I was there in October and I'm a bit bored of the strip and would love to go to a good bar to try some quality American craft beer.
      
      Any of you guys here recommend a bar or two? Ideally it would serve food as well so I can then expense the beer as well as the food :drink:

      Ha ha Chesl, yep Tennents Super (Scottish tramp juice), apparently used to have lager lovelies printed on the can too (late 1980's).
      BTW - Lager lovelies = female models! I don't think you get away with that now either :dunno:

   3. How much when repitching from yeast slurry

      I haven't tried it before but thought I'd give yeast washing/re-using a go. I've got a bottle of my old yeast which has been washed in the fridge, I've gotten rid of any trub and any top floating beer/water to leave me with about 200mls or so of yeast slurry.
      I only do small batches of around 2.5G/10L (into fermenter) so I was wondering how much of this yeast slurry I should pitch into my next brew (OG ~ 1.050)?
      I tried using the Mrmalty.com website but it suggested I only need 43 ml, that's...

      I recently ordered two separate grain bills from a new grain supplier I'm trying out.
      I asked for the grain to be milled and for it to be a bit finer as it's for BIAB.
      I did a brew yesterday with one of the grain bills and I noticed that there was a lot of very fine almost like powder/flour in with the grain that was in my kettle.
      My kettle doesn't have a ball valve so when I transfer to the fermenter I usually simply have a standard kitchen fine sieve over the opening to the fermenter and I...

      The only time you should consider double-crushing is if your mill has crappy knurling such as at my LHBS where the knurling can allow a grain, if it falls a certain way, to pass through the mill uncrushed. In that case, a second run will often get those uncrushed grains and not pulverise the already crushed ones too much.

      I recently did my first BIAB (mini-BIAB) and after three weeks in the bottle I put one in the fridge earlier today.
      I've been brewing 'enhanced' kits for 12 months and I was really interested to see if I could taste the difference between one of my Pale Ale kits (it's a clone of a well known Australian pale ale called Fat Yak) and my first all-grain brew.

      One daft thing I did, when I ordered the grain bill I needed 90g of wheat malt but I accidentally put in 900g!
      
      Yep did that myself recently typo on my grain order to LHBS resulted in 600g of black malt instead of 60g so ended up with an Extra Extra Black IPA.

      I'm on my 3rd mini-BIAB and for each one I've been ordering the exact grain bill, having it milled and posted to me.
      The issue with this is that the postage is costing as much as the grain.
      
      I don't want to spend $250 on a grain mill and buy and store unmilled grain so I'd like to buy a certain number of milled grain bills and go and make the trip to pick it up and then have them ready to go for the next X brews.
      
      My question therefore is:

   7. 9L wort in a 30L fermenter

      I'll have a bit of time on my hands over the Xmas period and I'd like to get two brews on the go. I typically have about 9L VIF. I have a 15L fermenter that I typically use for this but if I want to have two on the go I'm going to have to put one of the brews in my larger 30L fermenter.
      Is there any issue having the 9L wort fermenting in a 30L vessel? I'm not sure why I think there would be but just thought I'd check.

      Ok thanks, so no problems then. The only small thing is I can't fit two fermenters in my temp controlled fridge but I can deal with that.

      I noticed in the new Gordon Strong book a few of his recipes ask for a hop stand and the recipe might say something like:
      Centennial + 10 mins.
      
      I've just had a read about hop stands as it was new to me and I've a few questions I'm hoping you more experienced brewers can help me with..

      Sure, a lot of people start out trying to make a commercial beer they like but then regularly use other Brewers recipes for inspiration.
      
      Often trying to replicate recipes can help you refine your own processes and improve your brewing. It's all part of the fun!

      I was leafing through a Gordon Strong book today and in many of his recipes he is adding grains during vorlauf.
      
      Given my brewing process is a fairly rudimentary BIAB process with no sparging or vorlauf (didn't know what it was until I read it just now!).
      
      If I was to follow one of these recipes how could I do it given my standard BIAB process? Just throw them into the main mash with all the other grains would be the obvious answer but was wondering if there was more to it?

   10. How long to reach target final gravity?

       I've got a brew on the go, it went into the fermenter on Sunday.
       I've been looking for the usual krausen which has been happening but it's hardly been vigorous. The original gravity is 1.056 and I took a sample yesterday and measured the gravity at 1.025. So that is 3 days after pitching the yeast. Ideally want to get to about 1.014.
       
       I'm a bit worried I've under sized the amount of dry yeast.
       
       Question is, is there a view as to the progress over say one week as to how far the brew should go...

       I'm on my third mini-BIAB - I'm following a recipe from Brewing Classic Styles, the American Amber Ale recipe.
       I've scaled the recipe for my brew pot and I've just finished the boil and I've wrapped it up and I'm leaving it to cool overnight and then I'll transfer to the fermenter and pitch the yeast tomorrow.
       
       The problem I have is that the pre-boil gravity was supposed to be 1.043 but my measurement came out as 1.057 !
       My end of boil ambient gravity reading came out as 1.075 and it's supposed...

       After getting the stock recipe NRB Amarillo Pale Ale under my belt, I now want to try one of the recipes in the Brewing Classic Styles book.
       
       In the book it states that the recipes assume that 5.5 Gallons/20.8L will transferred to the fermentor.
       
       When I'm adding this info into the BIABacus, do I need to change anything given that the recipes are based mainly around extract? I know each recipe gives the all-grain option as well but just wanted to check that I'm doing the right thing.

       I did my first ever all-grain BIAB brew today. I'd had it all planned out and it went really well thanks to the BIABacus and a checklist (and this forum of course).
       
       My brew length was set for a small 6L using a mini-BIAB using a cheap 19L stock pot. I followed Ralph's BIAB guide with the Amarillo APA.
       
       I even added a mash out for ten minutes at 78 degrees thanks to my novel lifting of the bag on the cupboard door!

       Not a Dumb Question.
       
       2 ways if you Clothes dry has A high setting, the +200F will sanitize in 20-30 minutes,
       or drop the Cloth In Sanitizer and wring the Cloth out and hang until dry, or use a dryer.

       I was browsing in a book shop yesterday at the homebrew books and I found one that looked pretty good, it was hardback and was very nicely produced with nice looking pictures of beer (beer porn? ;) ) and for each style it had a recipe.
       The book was called Brewing Better Beer by Emma Christensen, not sure if anyone has a copy or seen it?
       
       Anyway, my question was that in all the recipes, for the hops, it had the hope type, the weight and the AA% of the hop.

   15. BIABacus and scaling the yeast for a small batch

       I'm looking at doing the recipe NRB's All Amarillo American Pale Ale mini-BIAB, the BIABacus all looks good but I did have one question.
       I've ordered a 15g pack of the Safale yeast and the BIABacus doesn't appear to scale the yeast quantity.
       What should I do with the yeast, my volume into fermentor is 5.5L so can I/should I save some yeast and only pitch half or what?
       Is there a more 'scientific' way of me pitching the right amount of yeast?

       A good rule of thumb used with good results is 0,75 grams per liter for batches up to 1.060 og and 1 gram per liter for og 1.060 and above this is supposed to be the pitching rates the pro use.

       Not sure if this is the right area for it but I've been looking at the BIABacus in preparation for my first BIAB and I had a few questions.
       
       I've just got a new kettle, a 19L kettle and I was planning on doing a mini-BIAB using the recipe American Pale Ale - NRB's All Amarillo APA.
       
       To check a few things with the kettle I put in 12.10L of water as per the BIABacus TWN reading and I measured with a ruler and heated it up to strike temp and then onto a full boil which I left going for 30 mins...

       Partially off should be fine. The steam will escape just fine as long as you are maintaining a good boil.

       I've just bought the book brewing classic styles and I'm going to try my first BIAB shortly with one of the simple English Pale Ale's.
       A couple of the grains in many of the English bitters I can't find on a couple of websites of local brewing stores - the two are:
       Special Roast (50 L)
       Aromatic (20 L)
       Does this go by a different name outside of the US or if it's not available, what do others suggest I use as a substitute?

       You could substitute them for similarly matched roasted level, but it may not end up being the same beer though.
       
       Special roast is a BRIESS product here
       
       Aromatic is a DINGEMANS product here .
       
       A quick look on craftbrewer shows you can get them there, just be careful about the colour ratings (EBC, Lovibond, SRM).

       Grain and Grape are great but have a slightly limited range but plenty of variety for different beers. If you like Gladfield (NZ) malt then their Australian distributor onclick= window.open(this.href);return false; is in Footscray so you can get them a little bit cheaper. in Heidelberg West have just about every grain available in Australia. They are online only but have pickup. Im sure there's more but alot are just kit and kilo unfortunately.

       I've been doing 'enhanced' extract kits for a while with good results and I'm looking at moving up to BIAB.
       My fermentation temperature brewing pale ales has been between 18 and 24 Celsius as I don't have any temp control but as i say, it's not been a problem and I've had good results.
       When I look on this forum at the BIAB recipes almost all of them that I've seen, regardless of the beer style states the fermentation temp as 18 or 19.
       So my question is, if I brew those same recipes at 18...

       I don't use a heat source in the fridge, but that's my own personal preference.
       The probe cable is quite thin and fits across the door seal.
