Cooking With Beer

I made a fantastic beef and porter stew last night. To be served on top of mashed potato. I used up a whole lot of, not so perfect, test batch beer and mixed it up with a bit of stout to make the “porter”. Cubes of beef, Ground pepper, chopped up roma tomatoes, lots red onions, sprinkle of mixed herbs, garlic, mushrooms cut in half, bag of ready shredded carrots.

Beer tenderizes the meat and adds a huge flavour.

The Process: heat the beer to 157F, add the meat from a pulley system attached to the ceiling, stir vigorously, let stand for 90 mins, put vegetables in a sock…………

Anyone have any recipes? Anyone add alcohol to their food? Sherry trifle and tiramisu are my favorite deserts.

I began a thread in another forum I frequent where folks could post recipes (a computer forum actually!). We've had some great stuff posted up there. Perhaps the Mods can create a thread ("Guinges Bistro"?) for members to post recipes with the only caveat being the recipe must contain beer as an ingredient? What say you?

My Father-in-law is a fishing guide. He has a great beer batter recipe for fish. It's very crispy, delicious, easy to make and easy to remember:

1 cup beer, 1 cup flour, mix and let stand 10 minutes.
